Recipe Idea: Spiced Melon Soup

Did you know that it was the Egyptians who originated the melon, 5 centuries BC? We will have to wait until the middle of the XNUMXth centuryth century for it to arrive in France. Today, it is grown in Haut-Poitou and benefits from an IPG (protected geographical indication)!
Ingredients
- 2 large melons from Haut-Poitou
- 2 vanilla pods
- 1 knife tip of “4 spices”
- 2 cinnamon sticks
- 200 g of semolina sugar
- 2 oranges
- A few mint leaves for garnish
Recipe
Take the zest from one orange and collect the juice from the two oranges.
Filter the juice and complete with water to obtain a volume of 30 cl.
Pour the mixture into a saucepan with the sugar, bring to the boil, and add the spices, cinnamon sticks, split vanilla pods and orange zest.
Cook on low heat for 10 minutes.
Peel the melons, remove the seeds and cut them into cubes. Add them to the spicy syrup and cook again for 10 minutes over low heat, stirring occasionally.
Mix and let cool before putting it in the refrigerator.
Serve very cool in glasses and decorate with mint leaves.
