Flour, butter, sugar, eggs and salt: the ingredients of Broyé du Poitou have not changed for as long as this traditional flat cake has existed. Goulibeur has been continuing the tradition of this family recipe for nearly 40 years, and today makes the only pure-butter flat cake not containing yeast.
As tradition has it, this large pure-butter flat cake is not cut up with a knife; it is shared by punching it once in the middle, which breaks it up into unevenly sized pieces enabling everyone to choose a piece to satisfy their hunger.
Still today, Broyé du Poitou is an essential part of any family occasion in La Vienne. It can also be eaten with friends, or even on your own for breakfast, as a snack or for dessert, or to accompany a cream dessert, ice cream or fruit salad.
